Classic techniques and a formal understanding of haute cuisine shape the way Executive Chef Lanny P. Lancarte II approaches his Mexican-inspired menu. Growing up in the kitchen of Joe T. Garcia, his great grandfather, Lancarte translates the meaning of the meal in Mexico through a menu that offers possibilities like the Cream of Oaxacan Pasilla Soup, Mole Braised Lamb Shank, and Arroz con Leche to finish. Lancarte compliments his dishes with an Old World/New World wine list that exposes patrons to selections usually reserved for the cellar. While Lancarte continues his work learning and experiencing Mexican cuisine, the fruits of his labor make for seriously enjoyable dining.
